Dinner Tag

My sister Tagged me to do this dinner tag and here are fasy and easy dinner recipes that I love!! I tag who ever had fast & easy good recipes too;)


FAST EASY DA BOMB Tortilla soup

1.5 lbs shredded chicken (boil chicken and save broth)
1 can (14oz) green enchilada sauce …if you like it hot get hot or not get mild
1 (4oz) can of diced green chilies
1 (15oz) can pinto beans drained
1 medium onion chopped
2 T minced garlic
2 cups water... I just use the chicken broth from when I boil my chicken
1 (15oz) can chicken broth...just use the chicken broth from when boil chicken
2 tsp of each -salt, cumin, chili powder
Pepper to taste
1 can of corn drained
Bunch of Cilantro
Garnish with cheese, sour cream, avocado
I also cut strips of corn tortilla and let it toast in the oven at 350 for like 10 mins and put it on top..mmmm


CREAMY HERBED CHICKEN
4 chicken breasts
1 can cream of chicken
1 cup milk
1 envelope of liptons garlic and herb soup mix
1 t of thyme and parsley

Cooked fettuccine or spaghetti

Cook chicken till juices run clear then mix all above ingredients and pour over chicken and let it simmer in skillet for 5-10 mins

Herbed chicken and tomatoes
1 lb of chicken diced into cubes
1 can of Italian diced tomatoes
1 envelope of liptons garlic and herb soup mix
¼ t sugar
Hot cooked pasta
Shredded parmesan cheese (optional)

Cook chicken in skillet pour tomatoes, soup mix and sugar over top, let it simmer for 10 mins and serve over pasta sprinkle with cheese


Salsa Chicken
2 skinless, boneless chicken breast halves
1 (4 ounce) can tomato sauce
1/4 cup salsa
1 (1.25 ounce) package taco seasoning mix
1 teaspoon ground cumin
2 cloves garlic, minced
1 teaspoon chili powder
hot sauce to taste

Place chicken breasts and tomato sauce in a medium saucepan over medium high heat. Bring to a boil, then add the salsa, seasoning, cumin, garlic and chili powder. Let simmer for 15 minutes.
With a fork, start pulling the chicken meat apart into thin strings. Keep cooking pulled chicken meat and sauce, covered, for another 5 to 10 minutes. Add hot sauce to taste and stir together

• I like to put this over rice but you can put it in tortillas too

Shrimp Lemon Pepper Linguini
cooked linguine (spaghetti) pasta
1 tablespoon olive oil
6 cloves garlic, minced
3/4 cup chicken broth
¼ c lemon juice or one lemon juiced (save zest)
salt to taste
2 tsp. black pepper
1 pound fresh shrimp, peeled and deveined
1/4 cup butter
3 tsp parsley
1 tsp basil
Bring a large pot of lightly salted water to a boil. Add linguine, and cook for 9 to 13 minutes or until al dente; drain.
Heat oil in a large saucepan over medium heat, and saute garlic about 1 minute. Mix in chicken broth, lemon juice, lemon zest, salt, and pepper. Reduce heat, and simmer until liquid is reduced by about 1/2.
Mix shrimp, butter, parsley, and basil into the saucepan. Cook 2 to 3 minutes, until shrimp is opaque. Stir in the cooked linguine, and continue cooking 2 minutes, until well coated.

eevvaaa- these sound good!! i'm going to copy them. is the first one the recipe you made when we were there?? i miss you guys and little mean baby ;) just kidding, he's so cute i miss his little goat laugh when he gets something good to eat :)

SON THEY ARE CALLED TRUFFLES.......SO YUMMY FOR CHRISTMAS DESSERT....
